@olibrandoncoaching: When the weather starts getting better I love making orzo pasta salads. They are fresh, tasty and so easy to make. This was 569 calories and 53g of protein per portion. Ingredients for 2 portions: - 100g dry orzo - 300g chicken - 100g tomatoes - 100g cucumber - 50g red onion - 40g feta cheese Dressing - 20ml olive oil - 5g dijon - 15ml lemon juice - 15ml water - 10g honey - Oregano - Salt - Pepper - 1 small Garlic clove Start by air frying chicken which is seasoned with salt, pepper, garlic granules and oregano. Then get your pasta on and cook to packet instructions. While that cooks chop up all the veg - I’m using tomato, cucumber and red onion. If you soak the red onion in water it reduces some of the harshness. For the dressing mix all of the ingredients in the caption until it’s emulsified. Drain the pasta when it’s ready and wash off all the starch. Then mix everything together in a bowl and coat it in that zingy dressing. Half the portion and then top with your cooked chicken and feta cheese. And enjoy!
