Ingredients: - 1 cup quinoa - 2 cups water - 1 tablespoon olive oil - 1 teaspoon turmeric powder - 2 cloves garlic, minced - 4 cups fresh spinach, chopped - 1/2 cup kimchi or sauerkraut (fermented food) - 1/2 teaspoon black pepper - 1/2 teaspoon chili flakes (optional) - 1/2 teaspoon salt (or to taste, with low sodium salt) Instructions: 1. Rinse quinoa under cold water. In a pot, bring 2 cups water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork. 2. Heat olive oil in a large skillet over medium heat. Add minced garlic and turmeric, sauté for 1 minute. 3. Add cooked quinoa to the skillet. Stir well to combine with turmeric and garlic. 4. Add chopped spinach to the skillet. Cook for 2-3 minutes until wilted. 5. Stir in kimchi or sauerkraut. Cook for another 2 minutes to blend flavors. 6. Season with black pepper, chili flakes if using, and salt. Mix well. 7.
