It is spelled with e if it was made in a country with an e in it's name, so in Ireland is whiskey and in Scotland it's whisky

Not everything you said is 100% accurate - single malt scotch whisky is malted barley, not any malted grain. Both Irish and American whiskey can be spelled with an “ey” or “y”
