it's not about the amount of cheese, it's about the pairing of the cheeses. brie needs something sweet, fresh, like grapes to really bring out the creaminess. aged cheddar is already sharp, adding peppercorn means you need something contrasting to go with it. you could go with jam, that really enhances the flavour of the cheese.
prosciutto, especially good quality prosciutto, shouldnt be covered up, it should stand on its own. with some balsamic drizzle and fresh summer wine.
