This recipe is definitely a new favourite and is perfect for meal prepping😍 *makes 2x servings* Ingredients - 2x boneless salmon fillets - 100g (dry weight) spiral pasta - 1x tsp olive oil - 30g green pesto - Handful of spinach - Handful of rocket - 20g edamame beans - 100g baby plum tomatoes - 5g breadcrumbs - Salt & pepper - 30g lightest cream cheese - 20g feta cheese METHOD - Preheat your oven to 200C. - Add your salmon fillets to a lined baking tray then top with half of your pesto. - Season with salt & pepper then sprinkle over some breadcrumbs before placing into the oven for 17-19 minutes. - Meanwhile, add your spinach, rocket, edamame beans, chopped tomatoes, cooked pasta, olive oil, salt & pepper, remaining pesto and cream cheese to a bowl and mix until fully combined. - Add to your containers, top with your cooked salmon and finish with some feta cheese. - Then enjoy!
