Garlic & Rosemary Hash Brown. Full details below.. This variation of my hash browns came out of using leftover potatoes to make these for a naughty roast beef sandwich after work one Sunday. It’s a fail safe method for super crispy hash brown that is cooked throughout and flavour filled. I used duck fat for mine but you can use oil to stay veggie/vegan or even beef dripping if that’s your vibe. 500g peeled & grated potato I use Maris piper 3 garlic cloves minced 2 tbsp finely chopped fresh rosemary 3-4 tbsp cornflour/starch Generous pinch of Salt Duck Fat or oil for frying. 1. Wash the potato in cold water, squeeze out the moisture. 2. Fry in a little duck fat or oil with a pinch of salt, garlic and rosemary for approx 10 mins try not to colour the potatoes but make sure they’re fully softened. 3. Add the cooked potato to a bowl adding the Cornflour/starch, Combine well and allow to cool. 4. Shape into hash browns and set in the freezer for 30-40 mins 5. Fry in hot oil (160c/320f) until golden all over approx 4-5 mins on each side #potato #fyp
