Eggplant yogurt (Dahi Baingan) has to be one of the most delicious side dish to serve with your meal. The creamy texture from yogurt, sautéed veggies and shallow fried eggplant makes this recipe a classic.  Ingredients: 1 large eggplant thinly sliced  1/4 cup oil to shallow fry  Simple Gravy: 3 tbsp cooking oil 2 green chili, 6 garlic cloves, 1 inch ginger paste 1 medium chopped onion 2 medium chopped tomatoes  Garam Masala 1/2tsp 2 tsp salt 1 tsp coriander powder  1 tsp turmeric powder  1 tsp chili powder  Yogurt spread: 2 cups yogurt Salt to taste 3 tbsp Desi ghee 1 tsp cumin seeds  1 tsp crushed red chili flakes  6-8 curry leaves  Instructions: Slice eggplant in circles. Make sure the slices are thin. 1/8 of an inch. Shallow fry until golden brown. Set it aside.  In the same pan add more oil and once the oil is hot, add in the chopped onions. Sauté until translucent. Time to add crushed garlic, chili and ginger paste. Completely mix and cook for 5 minutes. Then add chopped tomatoes and spices. Cook until oil separates. Set it aside.  In a bowl add yogurt and salt. Mix well. In a frying pan heat some desi ghee and once piping hot, add curry leaves, crushed red chili flakes and cumin seeds. Let the spices sizzle for 10-15 seconds before immediately adding it to the yogurt. Mix and set it aside.  Time to assemble the layers. Take few tablespoons of yogurt and spread it on the bottom of the platter. Then tightly layer the eggplant. Now make a thin layer of simple veggie gravy. Add a generous layer of yogurt again and keep layering until all the ingredients are well packed. Last layer should be yogurt. You can eat it immediately, room temperature or cold.
