ΚΕΦΤΕΔΕΣ ΜΕ ΚΡΕΜΜΥΔΙΑ ΣΤΟ ΦΟΥΡΝΟ BAKED MEATBALLS WITH CARAMELIZED ONION SAUCE Ingredients For the meatballs: • 1 kg ground lamb • 1 onion, finely chopped • 2 garlic cloves, minced • ½ bunch fresh parsley, chopped • ½ bunch fresh mint, chopped • 100 g dry bread or breadcrumbs • 30 ml olive oil • 1 tsp vinegar • 1 tsp baking powder • Salt & pepper to taste For the onion sauce: • 8 large onions, cut in thick half-moon slices • 1 tbsp tomato paste • 6 ripe tomatoes, grated or blended • 2 sprigs fresh thyme • 1 bay leaf • 5 allspice berries • 3 garlic cloves, sliced • 2 sprigs fresh basil • 80 ml olive oil • Salt & pepper to taste Method 1️⃣ In a pan, heat the olive oil and sauté the garlic for 1 minute on low heat. Add the onions, thyme, bay leaf, and allspice. Cook for 5 minutes until the onions soften and become glossy. 2️⃣ Add the tomato paste, stir for 1 minute, then add the grated tomatoes. Cook until they release their juices. Season with salt and pepper, add 1 cup of water, and simmer on low heat until the sauce thickens but stays juicy. 3️⃣ In a bowl, mix the ground lamb with onion, garlic, parsley, mint, vinegar, baking powder, bread, salt, and pepper. Knead well and refrigerate for a few hours. 4️⃣ Pour the sauce into a baking dish. Shape the meat mixture into meatballs and place them over the onions. Drizzle with olive oil. 5️⃣ Bake at 170–180°C (340–355°F) for 30–35 minutes.
