Ferrigno is a third-generation cannery founded 1962, located in Provence, France. Taste 🎣 These French sardines are packed in butter with persillade, a sauce of parsley and garlic. I heat the tin under hot water until the butter is liquid then fry for 1-2 minutes per side. Garlic butter further dampens fishiness in an already super mild sardine. Texture 🎣 I received 3 large pilchards in the tin. The sardines are moist without being mushy, a happy medium in my opinion. I agree with the recommendation of steamed veg and potatoes since the butter alone is quite rich. I probably cooked them a bit hotter than intended, since the butter started browning, but I actually enjoyed the crispy bits of garlic that resulted. Price 🎣 A 115g tin is $8 available online from Rainbow Tomatoes Garden, on par with other Ferrigno sardines.
