Just got back from Margaret River and found a steak that had been dry-aging in the fridge for about 10 days. I seasoned it with oil, salt, and pepper, then popped it in the oven to reverse sear at 135°C for about half an hour. Finished it off in a hot cast-iron pan, turning frequently, and basted with butter and garlic for extra flavor. I paired it with smashed potatoes and broccoli seasoned with salt and pepper. To top it off, I added a bit of salsa verde from a previous video. Perfect dinner for a surprise fridge find! Ingredients: 	•	1 steak (dry-aged for 10 days) 	•	1 potato 	•	Olive oil 	•	Salt and pepper 	•	2 cloves garlic 	•	2 tablespoons butter 	•	Broccoli, seasoned with salt and pepper 	•	Salsa verde (optional) Recipe: 	1.	Prepare Steak and Potato: Season the steak with olive oil, salt, and pepper. Also, season a potato with olive oil, salt, and pepper. 	2.	Reverse Sear: Preheat the oven to 135°C. Place the steak and potato in the oven and cook for about 30 minutes or until the steak reaches your desired internal temperature. 	3.	Sear the Steak: Heat a cast-iron pan on high heat. Sear the steak, turning frequently, for a nice crust. Add butter and garlic, and baste the steak for added flavor. 	4.	Rest the Steak: Remove the steak from the pan, pour the butter over it, and let it rest for 10 minutes. 	5.	Smash the Potatoes: Quarter the potatoes and smash them using a burger smasher or similar tool. 	6.	Cook the Broccoli: Season broccoli with salt and pepper and cook to your liking. 	7.	Serve: Slice the steak and plate it with the smashed potatoes and broccoli.
