Pour over just enough neutral oil to cover. Place on the stove and bring up to 350°f/176°c and stir often. Once the shallots start turning golden brown, strain and immediately lay on a towel to drain and season with salt. Go back to the oil and pour a little bit back in the pot and add the coriander seed and briefly fry for around 1 minute. This happens quick so don’t turn your back on it. Strain, drain, lay out and season with salt just like the shallots. Give everything a rough chop and mix together. Chermoula 2 c parsley leaves 2 c cilantro leaves 1 tbsp coriander 1 tbsp cumin 2 tsp smoked paprika 1 tsp cayenne 4 cloves garlic 1 tbsp lemon juice 1 tbsp orange juice Olive oil Salt to taste Start by toasting up your cumin and coriander. You can do this in a blender or a spice grinder. But grind up your spices with a pinch of salt. Add your garlic and herbs and process into a smooth paste. Add your lemon and orange juice, then I added just enough olive oil to keep it quite thick. Taste and adjust your salt or add some more acid to taste. Orange yogurt 1/2 cup plain yogurt 2 cloves garlic 1 orange zest+juice Salt Olive oil Using a microplane grate in around 1 tbsp of orange zest to the yogurt. Then grate in the garlic. Add around 1/4 cup orange juice. Add 1 tbsp olive oil, this is for flavor so id say use a nicer olive oil. Taste and adjust your salt. Blistered snap peas Snap peas Lemon juice Preheat your griddle over medium low heat and add a touch of oil. Add your snap peas with a pinch of salt. Then just let them sit. Once you have a nice color add a squeeze of lemon juice and stir. After around 30 seconds remove and serve To finish the dish You can use any fish you like really, but cook your fish to your preferred liking, top with chermoula and fried shallots. Add a spoonful of yogurt to a plate and top with blistered snap peas, followed by your fish. Serve. #ad #food
