i think that's using an ability variant for a skill. so like a Dexterity (performance) check or a Charisma (Stealth) check

That's not quite how that rule works. You can use a different ABILITY (charisma in this case), but you still use the Stealth SKILL.

first of all, that's not what the wording means, it means being able to roll Intimidation with Strength instead of Charisma, not "i wanna use my highest skill to do what i shouldn't be able to do"

"skill bonuses with different abilities" means you would use CHA instead of DEX for your Stealth roll. Not a different ability Proficiency
