@the.baby.dietitian: I hope you know im kidding.🤣 Squash Fritter Recipe⬇️ Ingredients: 1 cup grated yellow squash (about 1 medium yellow squash) 1 cup grated zucchini (about 1 medium zucchini) 1 egg (no subs) 1/4 cup breadcrumbs or quick oats 1/2 cup mozzarella cheese (optional) 2 tbsp olive oil Instructions 1. Grate squash and zucchini, then thoroughly squeeze all excess liquid out a clean kitchen towel. 2. Mix grated vegetables with egg, breadcrumbs, and cheese. 3. Heat a skillet with olive oil to medium heat and scoop 2 tbsp of mixture at a time to form fritters. 4. Cook on each side for 3-5 minutes or until lightly golden brown. 5. Cool on a wire rack before serving.
