@maxiskitchen: Creamy veggie stuffed shells✨ For the Shells:▪️~8 oz. Jumbo Shells (~20 Shells)▪️2 tsp Olive Oil▪️1/4 Cup Grated Parmesan▪️ For the Veggie Filling:▪️1 Tbsp Butter▪️2 Cloves Garlic, minced▪️1 Large Leek (8 oz.), sliced thin▪️1 tsp Kosher Salt▪️1/2 tsp Pepper▪️1 Large Broccoli Crown (8 oz.), finely chopped▪️5 Cups Baby Spinach (5 oz.)▪️1/2 tsp Oregano▪️1 Egg▪️1 Cup Ricotta (8 oz.)▪️1/2 Cup Shredded Mozzarella▪️ For the Béchamel Sauce:▪️4 Tbsp Butter▪️1/4 Cup Flour▪️4 Cups Whole Milk▪️1+1/2 tsp Kosher Salt▪️1/2 tsp Black Pepper▪️1 Dash Nutmeg▪️1 Dash Cayenne Pepper (optional)▪️1/2 Cup Grated Parmesan▪️ 1️⃣ Preheat oven 375F and bring a large pot of salted water to a boil for the shells; boil shells according to package directions and then drain and toss in olive oil so they don’t stick 2️⃣ Place the pot back on the stove over medium heat and sauté the garlic and leeks in butter with salt and pepper for 2-3 mins until leeks are tender; add the broccoli and oregano and sauté 2 mins, then add the spinach and sauté until wilted and tender (2 min); transfer the veggies to a bowl to cool and clean out to pot 3️⃣ To make the béchamel, place the pot back on the stove over medium heat and melt the butter then add the flour; cook the flour for 1 min, whisking constantly, then start gradually adding the whole milk 1 cup at a time, whisking so that all the milk gets fully incorporated before adding more; once all of the milk is mixed in, add the salt, pepper, nutmeg, cayenne, and parmesan; turn the heat to medium high and cook until the sauce bubbles and thickens then turn off the heat 4️⃣ Mix 1/2 cup of the béchamel in with the veggies along with the egg, ricotta, and mozzarella 5️⃣ Pour the rest of the béchamel into a 9x13” baking dish; stuff the shells with the veggie filling using a spoon and place them seam side up in the baking dish; sprinkle with parmesan and then cover the dish with foil 6️⃣ Bake covered for 20 minutes and then remove the foil and bake for 10 more minutes until golden brown in areas (option to broil the top for 1-2 mins); serve with the creamy sauce from the base of the dish and a sprinkle of fresh parm - enjoy! ⏲20 minute prep time + 1 hour cook time Recipe serves 4 people . #recipetok #EasyRecipes #easyrecipesathome #maxiskitchen #stuffedshells
