To lessen the bitter taste, you can rub salt to the chopped bittermelon for 5-10 mins. Wait till it excrete the sap/water then rinse it.

as someone who is allergic to shrimp and from an ilocano background, the fish variant of bagoong (fish paste) is a great alternative too and what we use in our household.
