Chorizo con papas was a go-to growing up. My mom would make these for us usually on the weekend. This dish was a quick, easy, and an affordable option. So today I wanted to share it as a way to make Mom feel special for Mother's Day! I love to use Guerrero Caseras Flour Tortillas because they taste great and have a very soft texture making them perfect for a delicious meal. @Guerrero Tortillas Learn more and snag your own for Mother's Day at the link in my bio! Recipe: Guerrero Caseras Flour Tortilla 3 tablespoons oil 3 russet potatoes 1 pound pork chorizo 1 roma tomato 1 jalapeno 1/4 cup white onion Queso chihuahua Eggs Salt Pepper Garlic powder Onion powder Directions: 1. Peel then soak the potatoes in cold water for 10 minutes. Then drain and pat dry. Season with salt, pepper, garlic powder, and onion powder. Next, add oil to a large pan and add the potatoes. Dont stir until you notice they’re becoming a little crispy. When the potatoes are ready remove them and set aside. 2. Add the chorizo to the same pan and cook for 5 minutes. Next, add the onion, jalapeño, and tomato continue cooking for 5 minutes. Then add the potatoes back and give it a good stir and lastly add cheese! Turn off heat and cover until the cheese is melted. 3. Add Guerrero Caseras Flour Tortilla to a dry skillet and warm them up on both side. Transfer to a plate and layer on fried eggs, chorizo con papas, and your favorite salsa. #guerrerotortillas #guerreropartner
