Remove the chicken from the pan using a slotted spoon to retain the oils place in a bowl and set aside. Return the pan to the heat add in the oven and cook until they are soft. Once the onions are soft add in the coconut milk and stir, allow to simmer and reduce. Add in the chopped coriander stir well and allow to reduce further. Add in the washed spinach, stir and cook until the spinach starts to wilt. Return the chicken into the pan, stir and allow to cook for a further 10 minutes or until the sauce reduces to your preferred consistency. Serve with rice and garnish with more chopped coriander.
