Are you a beet lover ir hater?Beets 2 ways! Recipe below. Serves 5-8 Beet 8 Large beets  1/3 Cup chopped parsley 1/3 Cup chopped walnuts 1/2 Tsp salt 2 Shallots sliced thin Balsamic vin (recipe below) Whipped Goat Cheese 8 Ounces goat cheese 2 Garlic cloves minced or grated 1/2 Lemon juiced 1/4 Cup milk Balsamic Vinaigrette  3 Tbsp balsamic  1 Small shallot  1 Tbsp honey  1/2 Tsp salt Pinch of pepper 1/2 Tsp mustard 1/3 Cup olive oil 4-6 slices of toasted bread. I used the Seeduction bread from whole foods -Preheat oven to 375F -Add the first 6 balsamic vin ingredients to a blender. Blend for 30 seconds and then continue blending and stream in the olive oil. Set aside. -Remove beet stems, rinse, wrap in aluminum foil and roast in the oven for 75 minutes or until you can easily pierce through the beet using a fork. -Once the beets have cooled, remove the skin, dice and add to a medium sized bowl -Pour balsamic vin over the beets and let marinate for 1/2 hour -While the beets marinate, add all of the whipped goat cheese ingredients to a blender or food processor and blend until creamy and smooth. -Add walnuts, parsley, salt and shallots to the beets and gently mix together -Spread the whippped goat cheese on toast and top with beets or serve on a plate as shown . . . . . . . . . #beets #toast #salad #beetrecipe #saladrecipe #goatcheese #vegetarian #vegetarianrecipes #yum #momsofinstagram #lunchideas #lunchrecipe #vegetarian #EasyRecipe #healthyrecipe #foodblogger #recipedevelopper #momblogger #cookingvideo #homecooking #fallfood
