Fluffy banana muffins with cozy chai flavor and a walnut crumb topping 🤎🍂 ✨recipe✨ Banana muffins: 2 bananas (mashed) 1/2 cup butter (1 stick) 2 large eggs 1 cup brown sugar 2 teaspoons vanilla 2 1/2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon baking powder 1 tablespoon chai spice mix (chai mix recipe bottom of ingredient list) 1/2 teaspoon flakey sea salt Streusel topping: 1/2 cup walnuts (roughly chopped) 1 cup all-purpose flour 1/4 cup granulated sugar 1 teaspoon chai spice 6 tablespoons butter (softened) Chai spice: 3 tablespoon ground cinnamon 2 tablespoons ginger poweder 2 tablespoons ground cardamom 1 teaspoon ground nutmeg 1 teaspoon ground cloves 1 teaspoon ground black pepper ✨Instructions✨ -prepare a muffin tin placing 12 standard muffin papers and/or tulip paper in the pan. I used both for extra layer of protection to prevent the bottoms and sides from burning. -preheat oven to 325°. -in a small saucepan pan over medium heat, melt the butter. Turn heat to low, whisk butter as it cooks to prevent burning. Cook until butter has a dark amber hue (6-8minutes). Set aside to cool. -mash the bananas. -in the bowl of a stand mixer with paddle attachment or a large bowl with a hand mixer; beat the eggs on high speed for about 3 minutes. -add brown sugar and vanilla extract and beat for another minute. -add the mashed bananas and beat for a minute. -in a separate bowl; add the flour, baking soda, baking powder, salt, and chai spice. -add the dry ingredients to the wet ingredients and mix on low speed until no flour streaks, scrape the bowl and beat again. -add the browned butter and mix until fully incorporated. -for the streusel topping; in a medium size bowl, add the chopped walnuts, flour, sugar, chai spice, and butter. Mix until combined. -using a ice cream scoop (2 tablespoons), scoop the muffin batter and gently pour into each prepared muffin cup. -evenly divide the streusel topping over each muffin. -bake for 35-37 minutes or until an inserted toothpick comes out clean. -serve warm 🤎 #bananamuffins #fallbaking #fallrecipes #cozybaking #creatorsearchinsights
