Heavy Whipping Cream 1 tsp. Vanilla Start by zesting the lemons to get 2 TBS worth. Next in a saucepan add the zest, sugar, and hwc, mix together. Bring to a boil. While waiting for mixture to boil slice lemons lengthwise, use a spoon to gutt the centers out into a strainer over a bowl to catch all the juice. (You should end up with 1/3 cup of lemon juice). Save the lemon halves and set aside. When the lemon cream starts boiling reduce heat to a simmer and allow to simmer for 3 minutes. After simmering turn off the heat and mix in lemon juice and vanilla til completely combined. Let cool in the pan for 10-15 minutes. Strain the cream from zest into a measuring cup for easeir pouring. Pour into lemon halves and remakins. Refrigerate for 3+ hours or overnight. For a brûléed lemon posset add sugar ontop and tourch to your liking 😁
