@shanta_finds_and_food: Creamy Tuscan Scallops * 1 pound scallops * 2 tablespoons salted butter * 4 cloves garlic, finely diced * I used fresh cayenne but you can omit if you don’t like hot * 1 small yellow onion, diced * 5 oz jarred sun dried tomato strips in oil, drained (reserve 1 teaspoon of the jarred oil for cooking) * 1 3/4 cups heavy cream * Salt and pepper, to taste * 3 cups baby spinach leaves, washed or 1 package of frozen spinach thawed and drained well. * 1/2 cup fresh grated Parmesan cheese * 2 teaspoons dried Italian herbs dry your scallops and sear in 1 teaspoon of oil (I used the sun dried tomato oil but if low carb you can use whatever oil you like) once you cook your scallops. Remove from pan. Add butter, onion, garlic and sun dried tomatoes (unless you are omitting these) add heavy cream and bring to a simmer add you Parmesan cheese and spinach. Mix well.
