Perfect for a staple summer meal prep😍 *makes 2x servings* Ingredients - 400g chickpeas - 100g dried orzo - 30g green pesto - 100g baby plum tomatoes - 30g edamame beans - 1/4 red onion - 1/4 cucumber - Handful of rocket - 1x tsp extra virgin olive oil - Smoked paprika - Salt & pepper METHOD - Preheat your oven to 200C. - Add your chickpeas to an oven tray and season with some paprika, salt & pepper then roast in the oven for 20 minutes (make sure to shake halfway). - Once your orzo is cooked, at this to a bowl along with your chopped veggies and roasted chickpeas.
