@aimeetwigger: Are you up to any baking this weekend?. I fancied making some shortbread cookies, and it was a great opportunity to try out these pretty wooden moulds that @xmas.cookie.house gifted me. Such a therapeutic task. I used a basic shortbread recipe, but added some vanilla. I usually bake it in a square tin and cut it into rectangles. 250g unsalted butter, softened 110g caster sugar 1/2 teaspoon salt 1/2 tsp vanilla bean paste (optional) 300g plain flour 50g cornflour Cream the butter and sugar together until pale light and fluffy. (Use a whisk or stand mixer for best results) Add the flours, salt and vanilla and mix in. Knead together into a ball and chill for 30 minutes. Then to make them I lightly floured the moulds and pressed the dough in, then tapped them against the worktop to release them. I chilled them for about an hour before baking. I baked them at 160c for about 15 minutes, the thicker ones took 18. While warm I sprinkled on some sugar. (Alternatively roll out and use a cookie cutter, if rolling thinner bake for about 12 minutes).
