Today I bring you my version of duck breast: cooked at low temperature and lacquered with the precious Amirkaal honey from @Fulmer Honey 🍯 A completely natural honey, produced in the mountains of Central Asia in limited and numbered quantities. You can't go wrong with this technique! You will get a duck cooked to perfection, tender and very tasty. For the chest: 1 duck breast Thyme to taste Cook the breast in the Roner at 54 degrees for 2 hours, then brown 5 minutes per side in the pan. At this point, varnish with @fulmer's Amirkaal honey and set aside. For the sauce: 1 tablespoon of sugar 2 orange juice 150g demiglace thyme Orange peel Caramelize the sugar, glaze with the orange juice, then add the rest of the ingredients. Reduce the sauce over a low heat until it is nice and shiny. For the sweet potato: Cook in a salted oven at 190 degrees for 1 hour, then blend with a drizzle of extra virgin olive oil. #fulmer #fulmerhoney #adv  . . Oggi vi porto la mia versione del petto d’anatra: cucinato a bassa temperatura e laccato con il pregiatissimo miele Amirkaal di @fulmerhoney 🍯 Un miele completamente naturale, prodotto nelle montagne dell’Asia Centrale in quantità limitate e numerate.  Con questa tecnica non potete sbagliare! Otterrete un’anatra cotta alla perfezione, tenera e molto saporita. Per il petto: 1 petto di anatra  Timo qb Cucinate il petto nel Roner a 54 gradi per 2 ore, poi rosolate 5 minuti per lato in padella. A questo punto laccate con il miele Amirkaal di @fulmer e mettete da parte. Per la salsa: 1 cucchiaio di zucchero  2 succo arance  150g demiglace  Timo Scorza di arance Caramellate lo zucchero, glassate con il succo di arance, poi aggiungete il resto degli ingredienti. Fate ridurre la salsa a fuoco lento fino a quando non risulterà bella lucida.
