@stephvnietea: I LOVE me an extra spicy drunken noodle and I love how aromatic Thai basil makes this dish 🤤 ➡️ Recipe: Drunken Noodles (with homemade rice noodles) Serves 2 * 1/2 lb fresh rice noodles (my homemade recipe or 1/2 pack store bought works) * 1 cup Thai basil, cleaned and picked off stem * 1 cup canned baby corn * 1 cup straw mushrooms canned or fresh * 1/2 cup red bell peppers, 1/4 inch slices * 1/2 cup onion, 1/4 inch slices * 4-5 cloves garlic, finely minced * Cooking oil Chicken marinade— * 1/2 chicken thigh, skinless, boneless and thinly sliced * 1 tbsp dark soy sauce * 1 tbsp oyster sauce * 1/4 tsp black pepper Sauce— * 2 tbsp sweet soy sauce or use 1 tbsp dark soy sauce and 2 tsp honey as substitute * 2 tbsp oyster sauce * *** 1 tbsp dark soy sauce (only if you do use sweet soy sauce instead of my sub) * 1 tbsp fish sauce * 1 tsp sugar * 1/2 tsp chicken bouillon * 1/4 tsp black pepper * Optional: 1-3 fresh Thai chilies thinly sliced 1. Marinate chicken with dark soy sauce, oyster sauce and black pepper. Set aside for at least 15 minutes. 2. In a small bowl, combine sweet soy sauce (or sub), oyster sauce, dark soy sauce (if needed without sub), fish sauce, chicken bouillon, sugar and black pepper. Mix together and set aside. 3. Heat wok or pan with 2 tbsp cooking oil. Cook marinated meat until cooked through. Then add garlic and onions and sauté until onions are translucent. (You can also add fresh chilies at this point if you want yours to be spicy) 4. Add veggies and stir-fry for 2 mins. You want the veggies to be crunchy still. 5. Make a pit in the center of wok and add extra oil (about 1 tbsp) to ensure it doesn’t stick. Add in noodles and let it sit to slightly char the noodles. 6. Combine meat, veggies and noodles together and pour sauce all over. Scoop and lift noodles to mix well. 7. Lastly, add fresh Thai basil and gently toss.
