@tartecosplay: Huge Scorpion and Walking Mushroom Hotpot (outside the dungeon) Feeds 4 - 3 cloves garlic - 1 tablespoon dashi - Handful of dried scallops (optional) - Soy sauce (optional) - 4 cups of water - 2 sets of crab legs OR 2 lobster tails, halved Note: We like crab better than lobster, so we used crab even though lobster is closer in looks - Trumpet mushrooms - Shiitake mushrooms - Shimeji mushrooms - Enoki mushrooms (optional) - Baby bok choy - Dried seaweed knots - Shirataki noodles (loose or in knots) - Taro For the hotpot base, crush the garlic cloves, then add the garlic, dashi, and dried scallops (to taste) to a pot with 4 cups of water. Bring to a boil, then reduce to a simmer while preparing the remaining ingredients. If you would prefer a plainer hotpot as prepared in the dungeon, you may omit the garlic, dashi, and dried scallops, and instead boil the 4 cups of water with 1 tablespoon of soy sauce and a pinch of salt. Wash all of the ingredients thoroughly. Soak the seaweed knots in hot water to prepare them to eat. Drain and rinse the shirataki noodles. Slice off the tough bottoms of the mushrooms and baby bok choy. Make sure to check for dirt or sand inside the bok choy. Quarter the taro, then chop into inch-thick slices so that it will cook evenly. Arrange the prepared ingredients (crab or lobster, mushrooms, bok choy, seaweed knots, shirataki noodles, and taro) in a large pot. Carefully pour the hotpot base over the ingredients, then cover with a lid. Bring to a boil and let cook, covered, until the taro can be pierced by a chopstick or fork. Add soy sauce to taste.
