Whip the egg whites until stiff peaks form. This may take a few minutes. Make sure it’s on the highest speed so that the egg whites are infused with air. Give the egg whites a very light and gentle stir (just a few times) Line a baking sheet with parchment paper. Spoon the whipped egg whites onto the baking sheet, forming four mounds. Use the back of a spoon to make a small indent in the center of each mound. Gently place one egg yolk into each indent in the whipped egg whites. Season the eggs with salt and pepper, to taste.
