They say chicken soup is for your soul, but this recipe is really to warm your heart. ❤️ A fabulously high protein combination, this is going to be a beautiful and simple staple meal to your weekly menu! Ingredients:  - 2 medium onions, chopped  - 1 head of garlic, chopped  - 1 bunch of celery, chopped - 6 large carrots, chopped  - 2 large chicken breasts, halved - 2 cups of cooked quinoa - Juice of 2 lemons  - 1 can of black beans, rinsed - 2 quarts of chicken stock  - 3 bay leaves - 2 tbsp. Thyme  - Salt to taste - Avocado for topping  - Fresh parsley for garnish Directions~  Add your diced celery, carrots, onions and garlic to a large pot or dutch oven and sauté over a medium heat until soft. Once vegetables have cooked down, add your chicken breasts directly on top, followed by your chicken stock, lemon juice, thyme, bay leaves and salt. Cover and then bring to a boil over high heat. Once boiling, remove the lid and reduce heat to medium low, simmering for 30-40 minutes or until the chicken is fully cooked. Once the chicken is done, remove from your soup and shred using two forks, then add the shredded meat back in (I find that initially cooking the chicken in large pieces makes it easier to remove for this step).  At this point, add in your quinoa and black beans and cook until warmed through (about another 10 minutes).  Serve with slices of avocado and parsley!
