My mom’s poppyseed cake is a doctored mix with pudding mix added - it actually gets better with age, and using cheesecake pudding makes it taste 3 days old right out of the oven.

if you want even less work of a hack: box mix, no tweaking, at 325 til a skewer comes ALMOST completely clean. not 350(orwhatever) not for however many minutes - 325 til done. phenomenal every time.☆

My brother can't eat egg so we always just replaced it with jam or apple sauce or something similar. It made no difference to the cake texture or flavour (unless you add a lot of it)

i prefer box cake to scratch. idk what it is but all the cakes i make are dense and for it to be sweet you have to use tons of frosting. I like a moist cake and minimal frosting.

look I can make a box mix in 5 minutes and toss it in the oven for 20 to 30 minutes. I make red velvet from scratch it's a four hour ordeal of mixing each component for the right amount of time and if I forgot to sacrifice a goat that day my buttercream base will clump and be gross. scratch baking is a labor of love, anger and fear. I would rather a doctored box mix for an everyday day cake

As someone who bakes often from scratch and sometimes for money, my chocolate cake is always a doctored box mix with whatever specialty flavors added. Chocolate cake especially is very easy to dry out
