🌸 Dana Muthiya nu shak- gujju delicacy from city of Surat  Growing up we ate very limited varieties of food. My mom used to make recipes she knew on repeat. She didn’t have easy access to new recipes like we have today. I remember she had one recipe book and one notebook where she used to write down recipes from friends, neighbors or TV show.  I used to live in Ankleshwar, Gujarat which is very close to Surat so I had many friends from Surat. I tried Dana Muthiya, locho , Surat khaman and many things at their houses and absolutely loved it. And I learned how to make it when I started cooking after moving to the US.  Ingredients To pressure cook Dana:  Oil  1 cup Tuver Dana (pigeon peas) - @laxmifoodsbrand  1 cup Papdi Dana @laxmifoodsbrand  Green garlic ( deep frozen)  1/2 teaspoon Ajwain  1/2 teaspoon hing  Salt, turmeric, red chilli powder and dhana Jeeru powder  Dry red chilies  1.5 cups water  Muthiya :  1 cup chopped Methi leaves  1/2 cup chopped cilantro leaves  1/4 cup green garlic  1/3 cup roti wheat flour  1/4 cup Bhakhri flour  1/4 cup chickpea flour ( besan- little bit less than 1/4 cup)  2 tablespoons sesame seeds  1 teaspoons Ajwain  1 tablespoon sugar  Lemon juice  1/2 tablespoons baking soda  Ginger and green chili -crushed  Oil, salt, turmeric, red chilli and dhana jeeru powder  ( mix everything before adding flour and baking soda- no water needed if used exact measurements)  For gravy : - blanched spinach puree  Final mixture:  Oil, Ajwain, hing, ginger garlic and green chilli paste, spinach puree, water, salt, sugar and lemon juice  Add boiled Dana in gravy , add Muthiya.
