The elite chocolate chip cookie: My current fav cookie on the planet- Brown Butter, Miso, and Tahini, Chocolate Chip Cookie On the surface, this is just a chocolate chip cookie, we are adding brown butter, miso, and tahini to make it extra special. The flavors melt together in perfect harmony to create a complex yet familiar cookie with a chewy center and crunchy edge. Yield: 9 regular cookies [using ~78g of cookie dough] or 14 small cookies [using ~55g of cookie dough]  Ingredients: 130g Unsalted Butter 150g Dark Brown Sugar 50g Granulated Sugar 35g Tahini 20g Miso 1 Large Egg, Room Temp A Big Splash of Vanilla Extract 200g Plain Flour 1/2tsp Baking Soda 1/2tsp Salt 150g Dark Chocolate Bar Flakey Salt Steps: 1. Make brown butter: Add the butter to a saucepan and cook until it’s foamy and the milk solids turn brown. Remember to stir regularly with a spatula. Pour into a bowl and let it cool 2. When the butter is about room temp add dark brown sugar, granulated sugar, tahini, miso, egg, and vanilla. Whisk until smooth  3. Add flour, baking soda, and salt, then fold everything together with a spatula 4. Chop the chocolate bar into chunks. Pick out ~50g of the larger chocolate chunks and set them aside. Add the rest into the cookie dough and fold it through. 5. For the next step, you can either pop it into the fridge first and then portion it before baking, or portion it first and then chill it in the fridge. Regardless of which you choose chill the dough in the fridge overnight (at the least 1hr). When portioning, the recommended amount is written at the top where it says yield, use your hands to shape into balls 6. Pre-heat oven to 170°C and line a baking tray with parchment 7. Grab the chocolate chunks we picked out from Step 4 and press a few into the top of each ball of cookie dough 8. Spread the cookies out on the tray and bake at 170°C for ~10min. When in doubt, aim for it to be slightly under for a chewy cookie 9. Hit it with some flakey salt and let it cool completely before you take a bite and fall in love with my favorite cookie #cookierecipe #bakingrecipe #chewycookies
