MEAL PREP WITH ME 🍽️ For this weeks meal prep we have some Chocolate Chip Baked Oats for breakfast and a Creamy Fajita Rigatoni for lunch. Save for your next meal prep☝🏼 BREAKFAST: •Chocolate Chip Baked Oats •425 kcals per portion - 31g PRO, 51g CHO, 11g FAT Serves 2: -80g of oat flour -50g of protein powder (I use @myprotein white chocolate flavor) -20g of cocoa powder -1 tsp of baking powder -1 egg -1 banana mashed -100ml of unsweetened almond milk -20g of dark chocolate chips Method: 1. Blend the oats to make a flour. Add to a bowl along with the protein powder, cocoa powder and baking powder. Mix. 2. Add the banana, egg, milk and stir to combine. Mix in most of the chocolate chips but keep a handful for the top. 3. Pour into a lined baking tin and top with the rest of the chocolate. 4. Bake in the oven at 180°C for approx. 25 mins. 5. Slice and serve into 2 portions with toppings of choice. LUNCH: •Creamy Fajita Rigatoni •485 kcals - 47g PRO, 54g CHO, 11g FAT Serves 4: -280g of dried rigatoni -150ml of pasta water -440g of uncooked chicken breast -1 tbsp of olive oil -2 cloves of garlic, minced -1 red onion -1 red pepper -1 yellow pepper -1 packet of fajita seasoning -1 tbsp of tomato paste -30g of half fat creme fraiche -30g of cheddar -Salt/pepper -2 tbsp of parmesan -Fresh parsley, chopped Method: 1. Boil and cook the rigatoni for 8-10 mins. Drain and keep 150ml of the pasta water. 2. Add the oil to a pan and fry the onion and garlic for 2 minutes. Add in the diced chicken breast and cook for 5 minutes. Then mix in the peppers and let these cook for another few minutes. 3. Mix in the fajita seasoning and the tomato paste. Then add the creme fraiche, drained pasta and the pasta water. Mix well and let it simmer for 5 more minutes. Season with salt/pepper. 4. Once the sauce has reduced, mix in the cheddar cheese. 5.
