unfortunately my interwebs are delivered via photons and not electrons so grounding doesn't help.

Is it theoretically possible to “listen” into that cat6 cable over the ground coming off it? I don’t know much how that works

I put in a grounding block in on the basement side, pulled direct TV's, big old copper and grounded everything in sight, the coax, the coax blocks

You should be using only 1 well installed ground. Not multiple. Set your multimeter to volts and measure between 2 and then with your result have a think about why

DO NOT ground to your copper pipes. The pipes can get energized during a storm and fry your electronics.
