PASTA E FAGIOLI - SOUP SEASON 🇮🇹 Welcome back to SOUP SEASON - the series where I show you how to make the best soups in town.  For EPISODE 10 - a holiday special - we’re taking a trip to the island of Elba in Italy to make PASTA E FAGIOLI (pasta + beans) It’s a brothy, beany, one-pot pasta soup, and the recipe is completely adaptable depending on the ingredients, vegetables + seasonings you have at home. I enjoyed this in the sun in September, but it’s a soup I make all the time during the colder winter days - and you should too! I’ve written out my recipe for you below - so enjoy, and let me know if you give it a go! * THIS WAS FILMED IN SEPTEMBER BEFORE YOU TELL ME IT’S NOT SUNNY IN ITALY NOW / YOU KNOW I’M IN THE UK * INGREDIENTS (serves 4) 1 Celery Stick 1 Carrot 1 Onion 4 Garlic Cloves 1 Tbsp Fresh / Dried Oregano 1 Tbsp Fresh / Dried Sage 1 Tbsp Tomato Purée 1 Tbsp Chilli Flakes 1 Glass White Wine (optional) 400g Tinned Chopped Tomatoes 700g Canellini / White Beans 1l Vegetable Broth 150g Small Shaped Pasta Large Bunch Fresh Basil Parmesan (or vg alternative) Salt Pepper Sugar Olive Oil METHOD 1. Finely dice the celery, carrot + onion, then get a generous glug of olive oil into a saucepan on a medium heat.  2. Sauté the veg with a large pinch of salt until softened, then mince the garlic, add + fry until fragrant.  3. Finely chop the fresh herbs if using, then add with the tomato purée + chilli flakes, cooking out for a further 2-3 minutes.  4. Add a glass of white wine or a splash of vinegar to the pan for extra flavour, then cook off until evaporated.  5. Add the chopped tomatoes, beans, vegetable broth, then season with salt, pepper + sugar.  6. Bring to a boil, then lower the heat + simmer for 15 minutes until reduced + thickened.  7. Add the pasta, then cook until almost al dente.  8. Tear in the fresh basil, then ladle into bowls.  9. Finish with a swirl of olive oil, a good crack of black pepper, salt, parmesan if using, and more fresh basil, then enjoy! #pastaefagioli #soup #soupseason #italianfood #healthyrecipes #EasyRecipes
