HIGHER PROTEIN EGGPLANT PARMI One of my all-time most popular recipes is back, but upgraded! This eggplant parmi is now higher in protein, still super comforting, delish and so easy to make. Save the recipe below tag a friend and let me know in the comments if you’re going to make it🙌 Ingredients: 2 medium eggplants Olive oil 1 tsp Tuscan seasoning (or mix of rosemary, garlic, onion, parsley and salt) 1 cup tomato passata or pasta sauce 1 cup cottage cheese 1 cup shredded mozzarella Parmesan cheese Method: Preheat your oven to 200°C (fan-forced). Slice the eggplants in half lengthways. Score the flesh in a criss-cross pattern (careful not to cut through the skin). Drizzle the cut sides with olive oil and sprinkle generously with Tuscan seasoning (or your own mix of rosemary, garlic, onion, parsley, and salt). Place the eggplant halves cut-side up on a lined baking tray and roast for 40 minutes or until soft and golden. Once roasted, top each eggplant half with a spoonful of tomato sauce, followed by cottage cheese and then a layer of shredded mozzarella. Top with freshly grated vegetarian Parmesan cheese. Return to the oven for another 10 minutes or until the cheese is melted and bubbly and the edges are golden. Serve hot, perfect for lunch or dinner and makes amazing leftovers too.
