rosemary garlic pot roast & mashed potatoes 🎄✨👩🏼‍🍳 full recipe below 👇🏻  what you’ll need: 3-4 lbs chuck roast 3 cups @Kettle & Fire beef bone broth 1 medium yellow onion, diced 1 tbsp tomato paste 1 1/2 tbsp flour 1/2 cup red wine 1 lb bag of baby carrots 2 tbsp Worcestershire sauce 2 tsp dried thyme 2 tsp dried rosemary 6 cloves fresh garlic, minced 2 tbsp avocado oil Fresh rosemary Salt & pepper for the mashed potatoes: 3lbs mini red potatoes unpeeled 1/2 cup salted butter 8 ounces cream cheese 1/2 cup milk 1 teaspoon salt sprinkle of garlic powder Fresh chives for garnish instructions:  1. Preheat oven to 300 2. In a large oven safe pot (I used my Dutch oven), add 2 tbsp avocado oil on medium high heat. Season your chuck roast heavily with salt and pepper on all sides. 3. Once the oil is hot, sear on all sides until brown, then remove and set aside. This does not need to be cooked all the way; we will finish it in the oven! This process took me about 10 minutes, a few minutes on each side. 4. Turn down the heat to medium-low and leave the oil in. Add the chopped onion and minced garlic, sauté for 1-2 minutes. 5. Next, add the flour and tomato paste. Mix well. The flour will absorb all the excess oil. 6. Add the red wine and cook for about 1-2 min. 7. Finally, add the beef bone broth, Worcestershire sauce, dried thyme, and dried rosemary and stir well. 8. Add the meat back into the pot, the entire bag of baby carrots, and a stem of fresh rosemary. 9. Cover with a lid and bake in the oven at 300 for 2 1/2 -3 hours, but longer if your roast is larger than mine. Cook times will vary depending on the weight of the meat, but assume that the cooking time is about 1 hour per pound of meat. 10. Start prepping the mashed potatoes about 45 minutes before the meat is done. 11. To make the mashed potatoes, add the whole potatoes to a large pot of water and bring them to a boil. Boil for 20-25 minutes until it can be pierced with a fork. 12. Drain the potatoes and return them to the pot. Add the cream cheese, milk, butter, salt, and a sprinkle of garlic powder. Mash until smooth. Taste and season with more salt and garlic powder as necessary. 13. Once the meat has fully cooked, it should be easy to pull apart.
