brownie basque cheesecake. the fudgy-ness of a brownie with the creaminess of a basque cheesecake was a combo I didn’t know i needed, until thisss🤤 ~brownie recipe adapted from cookingclassy.com Ingredients— Brownie: 128g unsalted butter (melted) 225g granulated sugar pinch salt 2 large eggs tsp vanilla paste 74g plain flour 42g cocoa powder  100g milk choco chips Basque cheesecake: 445g cream cheese  3 eggs 110g granulated sugar 300ml double cream 20g plain flour Recipe— 1. Make brownie batter by mixing together melted butter, sugar and salt. 2. Then add eggs and vanilla paste, and mix well. 3. Sieve in flour, cocoa powder and then add choco chips, mix well and set aside. 4. Make basque cheesecake batter. mix cream cheese to loosen. 5. Add in eggs in 3 parts and mix well. 6. Add in sugar and mix.  7. Then add in double cream and mix well. 8. Sieve in the flour and mix until batter slightly thickens. 9. In a lined 8inch circle tin, pour brownie batter first and spread out evenly. Then pour in basque cheesecake batter and spread out evenly. 10. Bake at 200°C for 35mins, then at 220°C for 7mins. 11. Let the brownie basque cheesecake cool in the tin, then cover and refrigerate overnight still in the tin. Enjoy the next day✨ Notes: •when lining the tin with baking paper, the edges doesn’t need to be neat (see video). but make sure you flatten the wrinkles on the paper! •i experimented with the oven temperature here cos of the 2 different batters. didn’t want to over-bake the brownie but at the same time needed to get that burnt look on the cheesecake. After 35mins at 200°C in the oven, the cheesecake didn’t have much browning, so increased the temp for the last 7mins. I normally bake basque cheesecake at 220°C for 35-40mins, which now i think still would have worked fine cos the brownie wasn’t over-baked at all. So I’ll probs try this next time! •I normally like my basque cheesecake a bit firmer in texture, but the texture of this one is more looser (and much creamier). #browniebasquecheesecake #brownies #brownie #basquecheesecake #cheesecake #baking #bake #homebaking #homebaker #homebakes
