@georginaelizat: Spinach and ricotta flatbreads These flatbreads are super easy to make with only two main dough ingredients. Also higher in protein but honestly taste ridiculously good Ingredients 1 garlic clove, minced 100g / 3 cups spinach (wilt and squeeze out excess water) 1 tbsp lemon juice 190g / 3/4 cup ricotta cheese 50g / 1/4 cup feta cheese 1/2 lemon zest Salt and pepper to taste 250g/ 1 cup thick greek yoghurt 180g/ 1 1/2 cup self-raising flour 1 tbsp melted butter Dip of choice - I used a tomato + olive pesto Instructions 1. Pre-heat an oven to 140C/ 280F. 2. In a bowl, combine your flour and yoghurt. Start with a spoon and then use your fingers to bring the dough together. Knead into a ball for 1 minute. Add more flour if you feel it is too wet. 3. In a bowl, mix your ricotta, feta, chopped wilted spinach, garlic, lemon zest + juice, salt and pepper. 4. Divide dough into six portions. Then gently flour a surface. Place a portion of dough onto the surface and roll out into a thin shape. Add 1-2 tbsp of your spinach ricotta mixture. Then squeeze the edges together, flip the flatbread over and gently roll the flatbread again. Don’t over roll at this stage just gently roll. 5. Heat a non-stick pan on a medium-high heat. Place a flat bread in and leave for around 3-4 minutes, until golden and crispy. Then flip and leave for another 3-4 minutes. Place into the oven to keep warm (and finish cooking the middle if needed) whilst you prepare your other flatbreads. Then brush with melted butter and enjoy!
