pistachio shortbread three ways! 🎄 (*ad) this is my favourite time of the year because i get to start planning all my holiday cookie tins to gift to friends in the upcoming weeks. with western family ingredients from @Save-On-Foods (butter! flour! pistachios! jams and chocolate hazelnut spread!), i made one pistachio shortbread dough that can be transformed into four different festive cookies: pistachio linzer with strawberry jam, pistachio sandwich cookie with chocolate hazelnut spread, pistachio wreaths, and iced pistachio shortbread. creating one dough to make a variety of cookies is the ultimate holiday baking hack and allows you to do less prep but still get a beautiful spread of baked goods that are perfect for gifting. after the decorations and glazes have dried, they’re ready to be packed up and gifted. recipe: 113g western family unsalted butter, room temp 50g granulated sugar 1/2 tsp vanilla extract 140g western family all-purpose flour 60g roasted pistachios 1/2 tsp kosher salt to decorate and fill cookies: western family strawberry jam, western family chocolate hazelnut spread, royal icing, assorted sprinkles and nuts preheat oven to 350f. line bake sheet with parchment paper and set aside. blitz pistachios in food processor or blender. in a bowl of stand mixer, beat butter and sugar until smooth. add vanilla and combine. whisk together flour, blitz pistachios, and salt. add the dry ingredients to the wet and mix on low speed until just combined. roll out dough between two pieces of parchment paper to 1/4 inch in thickness. if dough is too soft as this point (sticks to parchment), transfer to fridge to chill for 15 min. stamp out shapes and transfer to baking sheet, allowing 1/2-inch between each cookie. bake until edges are golden brown, about 10-12 min. smaller cookies will need less time (check at 8-9min). allow cookies to cool completely before decorating. #holidaybaking #christmascookies #christmascookie #cookierecipe #shortbread
