@rovinghaggis: 🏴 SCOTTISH RUM TRUFFLES 🏴 Rum was actually popular in Glasgow before whisky if you can believe it. Brought over from the West Indies by soldiers it was taken to quickly by the Scots. This formed a significant trade route, & merchants were made wealthy with the import of rum, tobacco, cotton & sugar, leading to them to buy up many buildings, creating what we now know as ‘Merchant City’. There are still Rum distilleries in Glasgow and in fact all over Scotland. Some still with links to the West Indies. Here are a few to check out… Meanwhile, these truffles hark back to my youth. Again an edible that invokes the Proust effect…straight back to the 80s!! So easy and quite delicious… Makes 22-24 truffles 100g butter 395g tin sweetened condensed milk 40g cocoa powder 60g desiccated coconut 1tsp flakey salt (I used smoked salt) 355g pack of digestive biscuits 50ml Scottish Rum (or any rum really!) Chocolate sprinkles and more desiccated coconut to finish Crush your digestive biscuits to a fine crumb. Heat the butter and condensed milk in a pan till melted. Add the rum, cocoa powder, coconut, salt and stir, before adding the crumbed digestive biscuits and combining well. Using clean or gloved hands, take a tablespoon of the mixture and roll into a ball, then roll into chocolate sprinkles till well covered. I also rolled some in more desiccated coconut, but honestly the chocolate sprinkles are my fave! Chill in the fridge till ready to eat, give them another quick roll if you like once they have firmed up a bit. Dangerously addictive so pace yourself - I allowed myself 1 a day! #chocolate #rum #truffles #fyp

This is the same recipe l, apart from the salt, that was handed down from my Scottish gran. I make them every Xmas for friends at their request. I will try the salt next time though 👏

Rum Baws as a mate of mine used to indelicately call them. Seeing them takes me back to being wee bairn, making these & marzipan fruits to give as Christmas prezzies. Couple of rumm balls & a big (1)
