@kim_boooy: Cooking up some kimchi jigae tonight! Traditionally, it calls for gochujang, but I love adding ssamjang instead--it brings such a rich, deep flavor to the stew. Ssamjang, with its blend of doenjang, gochujang, garlic, onion, sesame oil, and sugar, adds that perfect umami kick! Ingredients: - 2 tablespoons vegetable oil - 7 cloves garlic, minced - 1 medium onion, sliced - 200 grams pork belly, sliced - 1 pork broth cubes - Salt and pepper to taste - 1 tablespoon light soy sauce - 2 cups kimchi, chopped - 2 tablespoons ssamjang (Korean soybean paste) - 1 1/2 cups water (or enough to cover ingredients) - 100 grams enoki mushrooms - 200 grams tofu, cubed - 2-3 spring onions, chopped (for garnish) Instructions: 1. **Saute Garlic and Onions**: - Heat the vegetable oil in a pot over medium heat. - Add minced garlic and sliced onions, saute until onions are translucent and garlic is fragrant. 2. **Add Pork Belly**: - Add the sliced pork belly to the pot. - Cook until the pork belly is browned. 3. **Add Pork Broth Cubes**: - Add the pork broth cubes to the pot. - Stir to dissolve the cubes in the rendered pork fat. 4. **Season**: - Add a pinch of salt and pepper to taste. - Add 1 tablespoon of light soy sauce and stir to combine. 5. **Add Kimchi**: - Add the chopped kimchi to the pot. - Stir and cook for about 5 minutes until the kimchi is softened. 6. **Add Ssamjang**: - Add 1 tablespoon of ssamjang to the pot. - Stir well to combine with the other ingredients. 7. **Add Water**: - Pour in enough water to cover the ingredients. - Bring to a boil, then reduce the heat to a simmer. - Cover and cook until the pork is tender (about 20-30 minutes). 8. **Add Enoki Mushrooms and Tofu**: - Once the pork is soft, add the enoki mushrooms. - Then gently add the cubed tofu. - Continue to simmer for another 5-10 minutes. 9. **Garnish**: - Add chopped spring onions on top for garnish. 10. **Serve**: - Ladle the Kimchi Jjigae into bowls and serve hot with steamed rice. . . . . #kimchijjigae #kimchisoup #cravings #koreanfood #Foodie #foodtiktok #FoodTok #fyp #fypシ゚viral #fypage #foryou #foryoupage #tastyfood #delicious #yum #tofu #foodblogger #foodieph
