Seafood Stir-Fried Glass Noodles For the sauce: 1.5 tbsp light soy sauce 1 tbsp oyster sauce 1 tbsp cooking wine 1/2 tbsp sugar 1/2 tsp seasoning powder 1 tsp pepper Instructions: 1. Soak your glass noodles in hot water for 5 minutes, then chill them in cold water for another 10. Add an egg yolk and soy sauce—this gives them colour and keeps them from turning clumpy. 2. Blanch your prawns and squid, then mix a sauce with soy sauce, oyster sauce, cooking wine, sugar, seasoning powder, and pepper. 3. In a pan, sauté shrimp heads in oil for that rich seafood flavour. Add shallots, garlic, dried shrimp, spring onion, and chilli strips. 4. Toss in your noodles, seafood, and pour in the sauce.
