🍑 This low-carb peach galette might be my favorite dessert of the summer. It has a buttery, crispy crust, sweet juicy peaches, and toasted almonds with a lighter low-carb twist. It looks like something from a bakery, but it’s surprisingly easy to make. Ingredients Dough • 213 g Farmer Cheese • 77 g butter, melted • 1 egg • 40–45 g allulose • 145 g all-purpose flour • 35 g almond flour • 1¼ tsp baking powder • ½ tsp vanilla extract • Zest of 1 lemon • Pinch of salt Filling • 2 medium peaches, sliced • 1–2 tbsp allulose • 1 tsp cornstarch • ½ tsp cinnamon (optional) Topping • 1 egg yolk • Sliced almonds Directions 1. Blend the farmer cheese until smooth. 2. Mix in the butter, egg, allulose, vanilla, and lemon zest. 3. Add the all-purpose flour, almond flour, baking powder, and salt. Mix until a soft dough forms. 4. Chill the dough for 30 minutes. 5. Toss the peaches with allulose and cornstarch. 6. Roll out the dough, add the peaches, fold the edges toward the center, brush with egg wash, and sprinkle with sliced almonds. 7. Bake at 350°F (180°C) for 30–35 minutes, until golden brown. 8. Let cool for about 20 minutes before slicing. 💡 This recipe makes enough dough for 2 medium galettes. I used half for this peach galette and wrapped the other half tightly in plastic wrap.
