@brittanymccrystal: MARRY ME CHICKEN PASTA Serves 3 | 502 cals | 36p Ingredients: - 300 grams chicken - 200 grams pasta shells - 60 ml sun-dried tomatoes, sliced (in oil) - 30 grams light butter - 1 tbsp tomato paste - 1 medium shallot, diced - 5 grams salt, to taste - 5 grams Italian seasoning - 2.5 grams onion powder - 5 grams pepper, to taste - 2.5 grams paprika (can substitute smoked paprika) - Dash of cayenne, optional - 2.5 grams red pepper, to taste - 6 cloves garlic, crushed - 590 ml chicken broth - 120 ml light coconut milk - 1/4 cup fresh parmesan (plus a bit more to garnish) - Handful of spinach - Fresh basil, torn, to taste Method: 1. In a large saucepan, heat about 1 tablespoon of sun-dried tomato oil and 1 tablespoon of butter over medium heat. Cook the chicken until no longer pink and set it aside. Cut it into bite-sized pieces. 2. Reduce the heat to low add the shallot, garlic and seasonings and tomato paste. Cook for 2-3 minutes 3. Pour in the chicken broth, scraping up any brown bits on the bottom of the pan. Bring it to a simmer, then add the tomato paste, pasta and stir. Cover and simmer until the pasta is al dente, about 10-15 minutes, stirring every few minutes. 4. Once the pasta is done, add the coconut milk, sun-dried tomatoes, and Parmesan. Stir until melted. 5. Add the spinach, cooked chicken, and basil. Stir until the spinach is wilted. 6. Serve immediately and top with more fresh Parmesan.
