Follow me for more @jadecarolanfitness  Macros👇 Calories 701 Protein 62g Fat 12g Carbs 90g Ingredients 👇 Curry sauce: 2 carrots 1 onion 4 garlic cloves 1cm ginger 1 red chilli (leave it out if you don’t like it spicy, it will still taste good but mild) 1 chicken stock pot (I used around 300ml of water) 1.5tbsp curry powder (I used medium) 1tbsp soy sauce salt & pepper Panko chicken skewers: 400g chicken breast egg wash 80g panko crumbs 1tbsp chicken seasoning, herbs, smoked paprika  250g cooked rice cucumber  rocket spring onion soy sauce Peel and dice the carrots and onion. Finely chop the garlic, ginger and chilli. Pan fry over a high heat for around 5-8 mins.  Mix in curry powder, chicken stock, soy sauce, salt and pepper. Bring to a boil then turn to a medium heat for around 20 minutes or until the carrots are soft.  Cube the chicken, season with chicken seasoning, herbs, paprika, salt, and pepper. Build onto skewers.  Place 1 bowl for the egg wash and 1 for the panko crumbs. Fully coat the skewers in the egg then into the crumbs. I did 30 minutes at 200 but 25 would be enough depending on how you like your chicken.  Blend the veggies adding extra water to get the consistency you prefer.  Slice the cucumber, spring onion and add to a bowl with rocket and soy sauce.  Serve with rice and extra spring onion!
