@foodwithgeorge: Dahomey Fish Stew - Benin 🇧🇯 Around the World - Episode 19 Ingredients: 700g Tilapia or any firm flesh, low-fat white fish flour to dredge fish salt and black pepper (to taste) ½ cup red palm oil 2 onions, finely chopped 2 tomatoes, chopped 1 cup fish stock or water 1 Red bell pepper 1 tsp chilli flakes Method: Cut the fish into two-inch sections. In a bowl, combine the flour, salt, and pepper. Coat the fish pieces in the flour mixture. Heat the oil in a pan and cook the fish, turning until it is golden brown on all sides. Remove the fish and set it aside. In the same pan, fry the onions for a few minutes, then add the tomatoes. Stir and cook for about ten minutes. Pour in the fish stock (or water), reduce the heat, cover, and simmer for another ten minutes. Add the red bell pepper and chilli flakes, then return the fish to the pan.
