I think u have to put it in the freezer when u put the ice cream for like 30 minutes and then put the chocolate

you have to free the icecream for 30 mins and then place it in the chocolate then back is the freezer till the chocolate solidifies so like 30 mins

As others have mentioned, freeze the ice cream hard first. That’ll not only stop it melting and the chocolate falling off but also help keep the shape of the taco.
