@pureencapsulations: #PureEncapsulationsPartner @colorful_superfoodie Superfoodie Nourish Bowl 💚 During the summer I am definitely making nourishing veggie bowls on repeat because my body craves all the fresh hydrating foods 🥰 The possibilities are endless when it comes to building a nourish bowl because you can combine a variety of veggies and plants for fun flavor combinations! A way to elevate your meals and add more nutritional value is by making delicious herb-based dressings to drizzle over everything! I used @pureencapsulations SunButyrate (linked in bio) in my Super Greens Dressing, which is a unique butyrate-rich triglyceride oil. It promotes intestinal health, gut barrier integrity, bowl motility, and abdominal comfort.‡ Gut health is very important to me, and I love finding ways to incorporate gut health supporting products in my recipes! Ingredients: • 2 cups salad greens • 1 cup roasted sweet potato cubes • 1/2 cup chopped red cabbage • 1/2 cup cucumber slices • 1/2 an avocado • 1/4 cup pumpkin seeds • 1/4 cup radish slices (I used the purple variety) For the Super Greens Dressing: • 2/3 cup parsley • 1/3 cup chopped spinach • 1/4 cup fresh basil leaves • 2/3 cup dairy free plain yogurt • 1 tbsp @pureencapsulations SunButyrate • Juice of half a lemon • 1/4 cup filtered water • 2 cloves of garlic • 1/4 tsp Himalayan salt Directions: 1) First, peel and cut a medium sweet potato into small cubes and coat with a little avocado oil and seasoning if desired. Place on a parchment paper lined baking sheet and roast for about 30 minutes. 2) In a food processor or small blender, add the parsley, spinach, basil, yogurt, SunButyrate, lemon juice, garlic, water, and salt. Blend until creamy consistency. 3) In a large bowl, add the greens, cabbage, cucumber slices, some roasted sweet potatoes, pumpkin seeds, avocado, and radish slices. 4) Drizzle some of the Super Greens Dressing over top and enjoy! ‡These statements have not been evaluated by the Food & Drug Administration.
