For Episode #4 of my FEAST OF THE 7 FISH SERIES I’m serving up MUSSELS & FREGOLA in a saffron, butter white wine sauce. For me, the best part of any mussel dish is the sauce and I never seem to have enough bread to soak it up. The fregola in this dish replaces the bread and gives you a vehicle to enjoy the saffron butter sauce. Fregola is similar to pearl couscous, but because it’s toasted it has a delicious nutty flavor.  Ingredients: 1 cups uncooked fregola or pearl cous cous 2 lbs of mussels cleaned and debearded  A few pinches of saffron threads 4 tbsp butter 3 tbsp olive oil 4 garlic cloves minced 3 shallots minced ½ tsp salt  ¼ tsp coarsely ground pepper 1 cups of dry white wine ¼ cup fresh minced parsley -Bring a medium sized pot of water to boil and salt generously. Add the fregola and cook until al dente. Reserve ½ cup of pasta water, then drain and set aside. -Place the saffron threads in a small bowl and while the pasta water is still hot pour over the threads and set aside. -Add butter and olive oil to a large pan and warm over medium heat.  -Once butter has melted, add garlic, shallots salt and pepper. Cook until shallots are translucent and garlic is golden brown.  -Add saffron water, white wine. Let cook for 3 minutes then add parsley and mussels.  -Cover with a tight fitting lid and increase the temp to medium-high. Cook until the majority of mussels have opened.
