French Onion Beef Dip Grilled Cheese This combo was outstanding. I have never slow cooked beef in this style and it was ridiculously good. The beef took about 3 hours on a low heat which was the perfect amount of time for the onions to cook down and caramelize and become sweet. Very tasty and well seasoned.  Recipe ⬇️⬇️⬇️ Ingredients; 1lb boneless beef chuck  2-3 large Spanish onions  2 cloves garlic  2 sprigs thyme  1 sprig rosemary  2 bay leaves  2 cups beef stock 2 cups red wine 4 tablespoons vegetable oil  Salt and pepper  2 slices French bread 2 tablespoons butter  1 cup grated Gruyère cheese  Method, Season and sear your meat on all sides. Add your herbs, garlic and bay leaves to the pot. Add your sliced onions to cover the meat completely. Turn the heat down to medium and add the red wine and beef stock. Put a lid on and allow this to slow cook for an hour. Remove lid, stir, and cover. Allow this to cook for another 2 hours on low heat with a lid on while stirring periodically. Once the times up. Remove beef turn the heat up and allow the juices from the onions to cook down. In a blender add Caramelized Onions and beef stock and blend until smooth for a dip for the sandwich. In a small bowl shred your meat and add 2 table spoons of the Caramelized onions to the bowl and mix to combine. Grate you Gruyère cheese and build your sandwich. Make sure that you throughly butter the outsides. Sear on medium heat until golden brown on the outside.
